Lemon Salmon Piccata

Ingredients
- 4 6-ounce salmon fillets with the skin on 24 ounces total
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- ½ teaspoon minced garlic
- ½ cup chicken broth
- 3 tablespoons fresh lemon juice
- 3 tablespoons drained capers
- ½ cup heavy whipping cream

Instructions
- Pat 4 6-ounce salmon fillets with the skin on dry with paper towels, and use 1 teaspoon salt and ½ teaspoon ground black pepper to season them on both sides.
- Heat 1 tablespoon unsalted butter and 1 tablespoon olive oil in a 12-inch skillet over medium heat, then add the salmon fillets skin down. Cook for 4-5 minutes before flipping the fillets over and cook for another 4-5 minutes. Remove the fillets from the skillet and reserve on a plate.
- Add ½ teaspoon minced garlic to the skillet and cook for 1 minute. Add ½ cup chicken broth and bring to a boil. Reduce the heat until the broth is simmering, and simmer for 3-4 minutes until the broth has reduced by half. Stir in 3 tablespoons fresh lemon juice and 3 tablespoons drained capers.
- Add ½ cup heavy whipping cream and bring to a simmer for two minutes. Add the salmon fillets back to the pan. Taste the sauce, and add salt and pepper if needed. Serve immediately.
