Lemon Snowball Cookies
Lemon Snowball Cookies are soft, round cookies flavored with fresh lemon zest and juice, rolled in powdered sugar after baking. Their texture is tender with a subtle citrus brightness, balanced by the buttery base and the sweet coating. Baked at a moderate temperature, they become slightly crisp on the outside while remaining light and delicate inside, making them suitable for tea time or dessert.
Ingredients
- 1 C butter unsalted, softened
- 1/2 C powdered sugar
- 1 tbsp lemon juice freshly squeezed
- 1 lemon large, zested
- 2 ¼ C flour
- ¼ tsp kosher salt
- ¾ C powdered sugar to roll the cookies in
Instructions
- Preheat oven to 350 degrees and line two cookie sheets with a silicone mat
- Using a large bowl and hand mixer, beat the butter and powdered sugar until combined
- Mix in the lemon juice
- Using a medium bowl whisk together the flour, salt, and lemon zest
- Gradually mix in the dry ingredients until dough comes together
- Using the scooper, scoop some dough into your hands and roll it into a ball
- Place onto the cookie sheets
- Repeat steps and roll 14 more balls onto the first cookie sheet
- Repeat steps and roll 15 balls onto the second tray
- Place into the oven and bake for 13-15 minutes
- Allow cooling for a few minutes
- Using a medium bowl, add in the ¾ C of the powdered sugar
- Roll each cookie into the powdered sugar
- Allow cooling completely before enjoying
