  • 1 C butter unsalted, softened
  • 1/2 C powdered sugar
  • 1 tbsp lemon juice freshly squeezed
  • 1 lemon large, zested
  • 2 ¼ C flour
  • ¼ tsp kosher salt
  • ¾ C powdered sugar to roll the cookies in

Instructions

  1. Preheat oven to 350 degrees and line two cookie sheets with a silicone mat
  2. Using a large bowl and hand mixer, beat the butter and powdered sugar until combined
  3. Mix in the lemon juice
  4. Using a medium bowl whisk together the flour, salt, and lemon zest
  5. Gradually mix in the dry ingredients until dough comes together
  6. Using the scooper, scoop some dough into your hands and roll it into a ball
  7. Place onto the cookie sheets
  8. Repeat steps and roll 14 more balls onto the first cookie sheet
  9. Repeat steps and roll 15 balls onto the second tray
  10. Place into the oven and bake for 13-15 minutes
  11. Allow cooling for a few minutes
  12. Using a medium bowl, add in the ¾ C of the powdered sugar
  13. Roll each cookie into the powdered sugar
  14. Allow cooling completely before enjoying
