Ingredients

Dough
  • 3 oz cream cheese
  • 1/2 cup butter
  • 1 c. flour
Filling
  • 4 eggs
  • 1 cup sugar
  • 1/3 cup lemon juice
  • 1/4 cup butter
  • slivered almonds

Instructions

    Cup of Yum
  1. To make the dough combine the cream cheese, ½ c. butter and flour in a food processor and process until it forms a big clump.
  2. Roll the dough into 24 1" balls and refrigerate for an hour.
  3. Preheat the oven to 325 F.
  4. Bake shells for 20 minutes and cool completely.
  5. Mix all the filling ingredients in a saucepan and cook until thickened.
  6. Spoon into the baked cookie shells and refrigerate.
  7. Top with almonds and lemon zest.
