Ingredients

  • ½ cup olive oil
  • ¼ cup lemon juice fresh
  • 1 tablespoon white wine vinegar
  • 1 ½ teaspoons Dijon mustard
  • 1 teaspoon lemon thyme or thyme, fresh
  • ½ teaspoon garlic minced
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • Optional teaspoon Monk Fruit Sweetener or Swerve, also known as allulose

Instructions

  1. Add all the ingredients in the bowl of an immersion blender or food processor.
  2. Blend until fully combined.
  3. Serve over your favorite salad and store leftovers in an airtight jar for up to a week.

Notes

  • Makes just over ¾ cup, serving size 2 tablespoons.
  • If you don't have an immersion blender or food processor, you can whisk the dressing using a hand whisk. Add all the ingredients in a mixing bowl, except for the olive oil. Whisk together, the slowly stream in the olive oil, whisking continuously.
  • If you don't have white wine vinegar, you can use apple cider vinegar instead.
