Lemon Vinaigrette
Nothing compares to the bright and tangy flavors of this refreshing Homemade Lemon Vinaigrette.
Ingredients
- ½ cup olive oil
- ¼ cup lemon juice fresh
- 1 tablespoon white wine vinegar
- 1 ½ teaspoons Dijon mustard
- 1 teaspoon lemon thyme or thyme, fresh
- ½ teaspoon garlic minced
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- Optional teaspoon Monk Fruit Sweetener or Swerve, also known as allulose
Instructions
- Add all the ingredients in the bowl of an immersion blender or food processor.
- Blend until fully combined.
- Serve over your favorite salad and store leftovers in an airtight jar for up to a week.
Notes
- Makes just over ¾ cup, serving size 2 tablespoons.
- If you don't have an immersion blender or food processor, you can whisk the dressing using a hand whisk. Add all the ingredients in a mixing bowl, except for the olive oil. Whisk together, the slowly stream in the olive oil, whisking continuously.
- If you don't have white wine vinegar, you can use apple cider vinegar instead.
