Lemon White Chocolate Chip Cookies
Lemon White Chocolate Chip Cookies blend fresh lemon juice and zest with creamy white chocolate chips in a buttery cookie dough. The dough is creamed chilled butter and sugar, then complemented by vanilla and lemon for brightness. Baked until just set, these cookies offer a soft texture with bursts of citrus and sweet white chocolate throughout.
Ingredients
- 1 cup butter slightly cold, cut into cubes
- 2 cups sugar
- 2 egg
- 1 teaspoon vanilla extract pure
- 1 1/2 Tablespoon lemon juice fresh
- 1 1/2 - 2 Tablespoons lemon may put more lemon zest for extra flavor, zest
- 3 cups flour
- 1 1/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups white chocolate chips
- *may put in a drop of yellow food coloring for color
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, cream slightly cold butter and sugar for 4 - 5 minutes until light and fluffy. Add eggs one a time, mixing well after each addition.
- Add vanilla, lemon juice, and lemon zest and stir to combine. If using yellow food coloring, add it now.
- Stir in flour, baking powder, baking soda, and salt and mix just until combined.
- Fold in white chocolate chips.
- Drop dough onto light colored baking sheet. Use a silicone baking sheet such as a Silpat or parchment paper.
- Bake for 9-12 minutes. Sprinkle with sugar or white sparkling sugar, if so desired.
