Lemon White Chocolate Chip Cookies
Description
Lemon White Chocolate Chip Cookies incorporate elements of lemon and white chocolate in a classic cookie base. Cold butter and sugar are creamed together to create a light, fluffy dough, enhanced by the addition of eggs, vanilla, fresh lemon juice, and lemon zest for fresh citrus notes. The flour is combined with baking powder, baking soda, and salt for balanced leavening.
White chocolate chips are folded in before dropping spoonfuls onto lined baking sheets. Baking at 350°F produces cookies that are soft in the center with lightly set edges. Optional yellow food coloring can be added to accentuate the lemon appearance. A sprinkle of sugar or sparkling sugar on top provides a subtle crunch and a decorative finish.
Ingredients
- 1 cup butter slightly cold, cut into cubes
- 2 cups sugar
- 2 egg
- 1 teaspoon vanilla extract pure
- 1 1/2 Tablespoon lemon juice fresh
- 1 1/2 - 2 Tablespoons lemon may put more lemon zest for extra flavor, zest
- 3 cups flour
- 1 1/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups white chocolate chips
- *may put in a drop of yellow food coloring for color
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, cream slightly cold butter and sugar for 4 - 5 minutes until light and fluffy. Add eggs one a time, mixing well after each addition.
- Add vanilla, lemon juice, and lemon zest and stir to combine. If using yellow food coloring, add it now.
- Stir in flour, baking powder, baking soda, and salt and mix just until combined.
- Fold in white chocolate chips.
- Drop dough onto light colored baking sheet. Use a silicone baking sheet such as a Silpat or parchment paper.
- Bake for 9-12 minutes. Sprinkle with sugar or white sparkling sugar, if so desired.
