Lemongrass Cilantro Dressing (Sauce)
This lemongrass cilantro dressing combines fresh cilantro, lemongrass, ginger, and chili-garlic sauce into a flavorful blended sauce with a bright acidic base from rice vinegar. Olive oil is gently incorporated for smoothness and richness. The result is an herbaceous, slightly spicy, and tangy dressing or sauce.
Ingredients
- 1 large bunch cilantro around 4 ounces or 2 cups, packed stems and leaves, fresh
- 2 tablespoons rice vinegar
- 1 ½ tablespoons lemongrass chopped
- 1 tablespoon ginger finely chopped or 1 1inch piece
- 1 teaspoon Chili garlic sauce
- 1 clove garlic
- 1 teaspoon kosher salt
- ⅓ cup water
- ½ cup extra-virgin olive oil
Instructions
- Combine cilantro, rice vinegar, lemongrass, ginger, chili-garlic sauce, salt and water in a blender or food processor container and blend until chunky-smooth.
- Add olive oil and blend just until incorporated, 20-30 seconds. Do not over blend after adding olive oil.
- Taste and season if needed.
