Description

Lemongrass Cilantro Dressing is made by blending fresh cilantro stems and leaves with chopped lemongrass, ginger, chili-garlic sauce, rice vinegar, kosher salt, and water until chunky but smooth. Extra-virgin olive oil is added last and blended briefly to combine without emulsifying fully, maintaining texture.

  • 1 large bunch cilantro around 4 ounces or 2 cups, packed stems and leaves, fresh
  • 2 tablespoons rice vinegar
  • 1 ½ tablespoons lemongrass chopped
  • 1 tablespoon ginger finely chopped or 1 1inch piece
  • 1 teaspoon Chili garlic sauce
  • 1 clove garlic
  • 1 teaspoon kosher salt
  • cup water
  • ½ cup extra-virgin olive oil

Instructions

  1. Combine cilantro, rice vinegar, lemongrass, ginger, chili-garlic sauce, salt and water in a blender or food processor container and blend until chunky-smooth.
  2. Add olive oil and blend just until incorporated, 20-30 seconds. Do not over blend after adding olive oil.
  3. Taste and season if needed.
