Lentil Salad with Red Wine Vinaigrette

Ingredients

  • 2 cups cooked lentils
  • 1 medium carrot (peeled and diced)
  • 2 talks celery (diced)
  • 1 cup cherry tomatoes (halved)
  • ½ cup minced red onion
  • ½ cup minced parsley
Red Wine Vinaigrette
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon whole grain mustard
  • 1 tablespoon honey
  • 1 clove garlic (minced)
  • salt and pepper (to taste)

Instructions

  1. Place all of the lentil salad ingredients in a large bowl (cooked lentils through minced parsley); set aside.
  2. In a small bowl, whisk together the red wine vinaigrette then drizzle over the lentil salad. Toss well to coat then check for seasoning. Adjust accordingly before serving.

Notes

  • This lentil salad is great for prepping ahead for a busy day lunch or to bring to a picnic or BBQ. It’s also great with chicken or chickpeas.
