Lentil Salad with Red Wine Vinaigrette

This flavorful lentil salad is filled with veggies and protein-packed, ideal for a make-ahead lunch or a busy weeknight side dish.

Ingredients
- 2 cups cooked lentils
- 1 medium carrot (peeled and diced)
- 2 talks celery (diced)
- 1 cup cherry tomatoes (halved)
- ½ cup minced red onion
- ½ cup minced parsley
Red Wine Vinaigrette
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon whole grain mustard
- 1 tablespoon honey
- 1 clove garlic (minced)
- salt and pepper (to taste)
Instructions
- Place all of the lentil salad ingredients in a large bowl (cooked lentils through minced parsley); set aside.
- In a small bowl, whisk together the red wine vinaigrette then drizzle over the lentil salad. Toss well to coat then check for seasoning. Adjust accordingly before serving.
Notes
- This lentil salad is great for prepping ahead for a busy day lunch or to bring to a picnic or BBQ. It’s also great with chicken or chickpeas.
