Delicious, creamy, flavoursome lentil soup in soup maker. This vegan red lentil soup is easy prep and perfect for serving with some pumpkin seeds as the weather gets colder.

Ingredients
- 6 medium tomatoes
- 100 g dried red lentils
- 4 large carrots
- 2 garlic cloves
- 1 medium white onion
- 240 ml vegetable stock
- 1 Tsp sweet paprika
- 2 Tsp curry powder
- 2 Tsp Coriander Leaf/Cilantro
- salt & pepper

Instructions
- Quarter the tomatoes and place them into the bottom of the soup maker. Then peel and slice the onion and the carrots and load up the remaining ingredients over the chopped tomatoes, making sure you add the seasonings last.
- Place the lid on the soup maker and cook the lentil soup for 25 minutes on the smooth setting or use the chunky setting and finish with a blend.
- Once cooked if the lentil soup is too thick, adjust with a little milk.

Notes
- Seasonings. I often refer to this as my spicy but simple lentil soup. You can mix and match the seasonings based on your mood and what spices you have in. For example, I made this today with coconut lime seasoning from M&S but I often make it instead with garam masala or a Thai seasoning.
