Light and Delicious Ground Beef Taco Salad

Ground beef taco salad is one of my go-to meals when I don't have that much time to cook, but want to get a healthy and kid-approved meal on the table!

Ingredients

  • 1 pound ground beef lean
  • 2-3 tablespoons taco seasoning homemade
  • 10 cups romaine lettuce washed well and chopped
  • 3 large Roma tomato halved
  • 1 cup cheddar cheese shredded, sharp
  • 2 avocado sliced
  • 1/2 cup tomato salsa
  • 1/2 cup sour cream
  • ranch dressing optional but I LOVE IT!, used as topping
  • fritos optional, used as topping
  • green onion optional, for topping

Instructions

Cooking the Taco Beef
    Cup of Yum
  1. Fry up the 1 lb of lean ground beef until browned and cooked throughout.
  2. Drain the fat and mix in 2 tbsp of the taco seasoning mix. If you added cornstarch to your homemade taco seasoning,, add in 1/4 cup of water to the mix.
  3. Cook until the taco seasoning is all mixed throughout the beef and thickened up.
  4. Remove from the heat and place in a bowl.
Taco Salad
  1. You have two options to make this taco salad:
  2. One, place all of the ingredients into a bowl and mix, then serve.
  3. Two, place the ingredients on a platter and then serve.
  4. Both options work, the first is fast and easy, the second looks amazing in presentation. It's up to you!

Notes

  • This taco salad is meant to feed a family of four as a main dish. If you aren't serving as a main dish you can adjust the ingredient amounts accordingly.
