Lipsmacking Jambalaya

Ingredients

  • 1 lb ground turkey
  • 1 cream four-cheese rice-a-roni box
  • 1 onion finely diced, small
  • 1 cream-style corn canned
  • 3 garlic pressed, cloves
  • 4 Bacon sautéed, drained and diced, strips
  • 1/2 tsp mrs. dash seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 Tbsp olive oil

Instructions

  1. Cook Rice-A-Roni according to instructions on the package.
  2. Place a large skillet over medium/high heat. Add 4 tbsp olive oil and 1 lb ground turkey. Season with 1/2 tsp Mrs. Dash seasoning, 1/2 tsp salt and 1/4 tsp pepper. Saute turkey until fully cooked, breaking it up with a spatula.
  3. Add onion and saute another 3 to 5 minutes, or until onion is soft.
  4. Add pressed garlic and saute 2 minutes, stirring constantly.
  5. Sautee 4 strips of bacon, place bacon on paper towels to soak up excess fat, then chop into small pieces.
  6. Add drained corn (cream-style corn is difficult to drain, so just drain the best you can.
  7. Cook another 2 minutes, stirring occasionally.
  8. Stir in the cooked, creamy Rice-A-Roni. (note: if your rice seems dry, just add a few tbsp hot water).
