Loaded Baked Potato Nachos

Ingredients

  • 8 medium Russet potatoes
  • 1 tsp garlic powder
  • 1 tsp season salt
Toppings
  • 2 c sharp cheddar cheese, shredded
  • 8 strips bacon, cooked to crispy and crumbled
  • 1 green pepper, diced
  • 1 sweet onion, diced
  • 2 scallions, sliced
  • sour cream

Instructions

  1. Preheat oven to 450⁰F.
  2. Wash potatoes and cut each potato into 8 wedges. Place wedges on a aluminum foil lined baking sheet and spray with cooking spray. Sprinkle with garlic and season salt, and toss to coat.
  3. Bake for 30 minutes, stirring and rotating the potatoes every 10 minutes. Potatoes are done when tender and golden brown
  4. Serve a bed of wedge fries and let your guests pick their favorite toppings for the potato nachos!
