This fully loaded Hummus Dip is topped with a tasty blend of tomatoes, cucumber, feta, and lemon that will have you and your guests coming back for more!

Ingredients

  • 2 cups hummus (homemade or store bought)
  • 3 oz feta cheese approx. 3/4 cup, crumbled
  • 1 cup tomato finely chopped
  • ½ cup cucumber finely chopped, English variety
  • ¼ cup green onion chopped
  • 2 TBSP olive oil quality, or avocado oil
  • 2 tsp lemon juice fresh
  • ¼ tsp salt
  • ¼ tsp basil dried
  • ⅛ tsp garlic powder
  • ⅛ tsp dried oregano leaves
  • paprika for topping, sweet
  • extra virgin olive oil for drizzling
OPTIONAL EXTRAS
  • olives sliced
  • Artichoke chopped, marinated
  • banana pepper chopped
  • sun-dried tomatoes
  • dill dried or fresh
  • parsley fresh
  • black pepper freshly ground

Instructions

    Cup of Yum
  1. Finely chop cucumber and tomatoes. Thinly slice green onion.
  2. Whisk together olive oil, lemon juice, and spices in a medium bowl.
  3. Add veggies, herbs, and crumbled feta to the bowl mix well. Set aside for flavors to marinate.
  4. Spread hummus on a serving platter. Sprinkle with paprika and drizzle with extra virgin olive oil.
  5. Ready to dive in? Add feta and veggie mixture to the hummus and serve with your choice of tasty dippers. (see notes) Enjoy!

Notes

  • Want to branch out from the typical pita bread or pita chips for dipping? This delicious dip is amazing with carrots, cucumber, bell pepper slices, halved sweet mini peppers, broccoli, cauliflower, celery sticks, crackers, and pretzels.
