Lokše Potato Flatbread
Lokše is a traditional Slovak potato flatbread made from skinless boiled potatoes and flour, rolled thin and pan-fried until golden. The dough puffs slightly during cooking, forming tender, soft flatbreads with characteristic blisters. They are typically brushed with pork lard or butter after cooking to enhance flavor and then spread with plum jam before rolling up as a sweet treat.
Ingredients
- 1 pound potato skinless boiled
- 1 cup all-purpose flour plus for dusting worktop while rolling up the potato dough
- ¼ teaspoon salt
- pork lard or goose lard / butter, for topping cooked lokše
- ½ cup plum jam or other solid jam, for filling
Instructions
- Peel 1 pound potatoes and boil them in lightly salted water until tender. Allow them to cool down. Finely grate the cooled potatoes using a hand grater with small holes.
- Add 1 cup all-purpose flour and ¼ teaspoon salt to the grated potatoes, and mix until you have a smooth, non-sticky potato dough.
- Divide the dough into equally sized pieces. Dust the work surface with flour. Roll out each piece of dough into a thin circle, approximately 8 inches (20 cm) in diameter.
- Preheat an iron skillet over medium-high heat. Fry each Lokše on the dry pan, cooking both sides until golden brown.
- Brush the hot Lokše on both sides with melted pork lard or butter. Allow them to cool for a while, then spread with jam, roll them up, and enjoy!
Notes
- Use just enough flour in the dough to make it non-sticky; too much flour makes the flatbreads dense.
- Lokše dough puffs and forms blisters when properly fried, indicating the ideal soft and tender texture.
- Clean the pan between batches to avoid burned flour affecting the flavor of subsequent flatbreads.
