Lokše Potato Flatbread
Description
Lokše Potato Flatbread is crafted from boiled, peeled potatoes mixed with just enough flour and salt to create a smooth, non-sticky dough. This dough is divided and rolled thinly into circles before being fried on a dry skillet until both sides develop a golden brown color with slight puffing and blisters on the surface. The frying technique and proper flour ratio are key to achieving the desired tender and soft texture without heaviness.
After frying, the flatbreads are brushed with melted pork lard or butter which adds moisture and richness, preventing them from drying out. Once cooled slightly, they are traditionally spread with plum jam or another solid jam of choice and rolled up, making a simple, comforting snack or dessert.
When rolling each piece, dust the work surface with flour to prevent sticking. Wiping the pan clean between batches ensures no burned flour affects the Lokše's flavor. The recipe yields about six flatbreads, making it suitable for small gatherings or family desserts.
Ingredients
- 1 pound potato skinless boiled
- 1 cup all-purpose flour plus for dusting worktop while rolling up the potato dough
- ¼ teaspoon salt
- pork lard or goose lard / butter, for topping cooked lokše
- ½ cup plum jam or other solid jam, for filling
Instructions
- Peel 1 pound potatoes and boil them in lightly salted water until tender. Allow them to cool down. Finely grate the cooled potatoes using a hand grater with small holes.
- Add 1 cup all-purpose flour and ¼ teaspoon salt to the grated potatoes, and mix until you have a smooth, non-sticky potato dough.
- Divide the dough into equally sized pieces. Dust the work surface with flour. Roll out each piece of dough into a thin circle, approximately 8 inches (20 cm) in diameter.
- Preheat an iron skillet over medium-high heat. Fry each Lokše on the dry pan, cooking both sides until golden brown.
- Brush the hot Lokše on both sides with melted pork lard or butter. Allow them to cool for a while, then spread with jam, roll them up, and enjoy!
Notes
- Use just enough flour in the dough to make it non-sticky; too much flour makes the flatbreads dense.
- Lokše dough puffs and forms blisters when properly fried, indicating the ideal soft and tender texture.
- Clean the pan between batches to avoid burned flour affecting the flavor of subsequent flatbreads.
