Lomi-Lomi Salmon

Lomi-lomi salmon is a traditional Hawaiian dish prepared with salmon and tomatoes. It was introduced to Hawaii by early Western explorers.

Ingredients

  • 4 salmon filets (salted)
  • 4 tomatoes , seeded and diced
  • 1 small onion , diced
  • 2 scallions , diced
  • ¼ teaspoon red pepper flakes (or powder)
  • crushed ice
For salting
  • coarse salt

Instructions

  1. Pour a layer of salt into a large glass dish.
  2. Rinse the salmon filets, dry them well and place them on the salt in a single layer.
  3. Sprinkle salt on top of salmon, making sure all sides of the salmon are covered with coarse salt.
  4. Cover the salmon with plastic wrap.
  5. Refrigerate the salmon for 2 to 3 days.
  6. Rinse the salmon thoroughly and pat dry before using it to prepare the lomi-lomi
Lomi-lomi
  1. First taste the salmon and, if it is too salty, soak it for 3 hours in a large bath of cold water by changing the water every hour.
  2. Drain and pat dry the salmon well with a cloth or paper napkin.
  3. Mix all the ingredients by hand and serve the lomi lomi with crushed ice on top.
