An easy vegetarian dish of green beans sautéed with tomatoes, onions and garlic. This is so simple, healthy and delicious!

Instructions
- Heat olive oil over medium heat, then add the onions and garlic (both minced and whole). Saute, stirring frequently for 5-6 minutes until onions have softened.
- Add the green beans (you don't really need to thaw them), and cook for about 8-10 minutes, stirring occasionally, until beans fully cook through.
- Add the diced tomatoes, salt, pepper and ground coriander, and mix. If there isn't enough sauce, add a splash of water. Reduce heat to low and simmer for another 10 minutes. Serve with pita bread and enjoy immediately, or cold!
Notes
- You can use fresh tomatoes or canned diced tomatoes like I chose to- so easy and still taste delicious.
- Feel free to omit the ground coriander if you don't have any on hand.
- I love garlic so I'd add even more whole cloves ! They soften and become creamy and a little sweet by the time this is done cooking.
- STORING LEFTOVERS: Leftovers taste great- This is usually enjoyed room temperature, but a lot of people eat this cold! It's actually not meant to be a hot dish. They can be stored 3-5 days tightly covered in the fridge.
