Low Carb Banana Bread
Low Carb Banana Bread uses Carbquik flour and sugar substitute to create a moist, tender loaf flavored with ripe bananas and warm cinnamon. Greek yogurt adds moisture and a slight tang, while almond milk and vanilla enhance the depth of flavor. This bread is a lower-carb alternative suitable for those preferring reduced sugar, baked until a clean toothpick comes out and cooled thoroughly before slicing.
Ingredients
- 2 cups Carbquik
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/3-1/2 cup sugar substitute
- 2 banana medium ripe
- 2 egg large
- 1/2 cup Greek yogurt
- 1/4 cup almond milk unsweetened
- 1 teaspoon vanilla extract
Instructions
- Lightly grease a 9x4 loaf pan and set aside. Preheat oven to 350°F
- In a medium bowl mash bananas with a fork or potato masher.
- Mix in eggs, vanilla extract, Greek yogurt, and almond milk.
- In a separate large mixing bowl whisk together Carbquick, baking powder, salt, cinnamon and sweetener.
- Form a well in the center of the dry ingredients.
- Pour the wet ingredients in to the well and gently fold the ingredients together until incorporated.
- Place bread dough in the prepared loaf pan.
- Bake for 42-47 minutes or until a toothpick placed in the center of the loaf comes out clean.
- Cool for 15 minutes before inverting to a baking rack.
- Cool completely before slicing.
Notes
- You may add up to 1 cup of mix-ins such as coconut flakes, nuts, or sugar-free chocolate chips to vary texture and flavor.
