Low Carb Banana Bread

This delicious low carb banana bread is made with real bananas and Carbquick, a low carb baking mix. Enjoy for breakfast or a snack. Top with peanut butter for a keto treat.

Ingredients

  • 2 cups carbquick
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3-1/2 cup sugar alternative
  • 2 medium ripe bananas
  • 2 large eggs
  • 1/2 cup Greek yogurt
  • 1/4 cup almond milk unsweetened
  • 1 teaspoon vanilla extract

Instructions

  1. Lightly grease a 9x4 loaf pan and set aside. Preheat oven to 350°F
  2. In a medium bowl mash bananas with a fork or potato masher.
  3. Mix in eggs, vanilla extract, Greek yogurt, and almond milk.
  4. In a separate large mixing bowl whisk together Carbquick, baking powder, salt, cinnamon and sweetener.
  5. Form a well in the center of the dry ingredients.
  6. Pour the wet ingredients in to the well and gently fold the ingredients together until incorporated.
  7. Place bread dough in the prepared loaf pan.
  8. Bake for 42-47 minutes or until a toothpick placed in the center of the loaf comes out clean.
  9. Cool for 15 minutes before inverting to a baking rack.
  10. Cool completely before slicing.

Notes

  • Add up to 1 cup of add-ins: coconut flakes, nuts, sugar free chocolate chips.
