Low Carb Pizza Bites

Low Carb Pizza Bites use melted mozzarella cheese shaped into small crusts topped with a light amount of marinara sauce, slices of salami and Parma ham, and fresh basil leaves. This recipe delivers bite-sized pizza flavors with a crispy cheese base, suitable for a low-carb diet or appetizer.

Description

The Low Carb Pizza Bites recipe creates individual pizza rounds by grilling dollops of shredded mozzarella cheese on parchment until browned and set, forming a crisp base. Once firm, the bases are topped with a teaspoon of marinara sauce, browned salami and Parma ham pieces, and fresh basil leaves for garnish.

The cheese base crisps from heat, providing a crunchy, cheesy texture contrasting with the savory cured meat and bright basil. Using pre-shredded mozzarella and simple toppings streamlines preparation without compromising flavor.

These bites are ideal as snacks or party appetizers, offering small portions of classic pizza toppings without carb-heavy dough. The recipe notes include guidance for quick homemade marinara sauce made from canned tomatoes, garlic, and herbs, which can be cooked to thicken or used fresh for a no-cook option. The crusts can also be made in a skillet over medium heat if preferred.

Ingredients

Servings

Pizza Base

  • 2.5 cups mozzarella cheese 300g, pre-shredded

Toppings

  • 12 teaspoon marinara sauce ***or make a quick version as described in the recipe notes
  • 5 salami cut into small pieces, slices
  • 5 parma ham cut into small pieces, slices
  • 12 basil fresh leaves

Instructions

  1. Set the grill/broiler to medium heat.
  2. Place small handfuls of the mozzarella on a baking tray lined with parchment paper. Leave space around the edges so the cheese can spread. Grill in the oven until the cheese has melted. Remove from the oven once the tops are browned.
  3. Let the mozzarella pizza bases cool on the tray so they can firm up.
  4. In a pan, brown the diced salami/ham.
  5. Add a teaspoon of marinara on every pizza and decorate with salami and ham pieces.
  6. Scatter over the basil leaves and serve.

Notes

  • Each pizza bite contains approximately 7 grams of net carbs; the recipe yields 12 bites.
  • For the marinara sauce, drain canned tomatoes before blending with garlic, salt, pepper, and Italian herbs; cook on the stovetop to thicken the sauce if desired.
  • You can prepare mozzarella crusts in a skillet over medium heat to brown them instead of using an oven grill.
