Low Carb Pizza Chicken {Keto recipe}

Ingredients

  • 4 boneless skinless chicken breasts
  • ½ onion
  • 1 oz tomato sauce
  • 1 can of diced tomatoes 15 oz
  • 1/2 teaspoon salt
  • 1 teaspoon garlic salt or can use garlic powder
  • 1 teaspoon pepper
  • 1 Tablespoon Italian seasoning
  • 2 cups mozzarella cheese
  • 1 oz pepperonis (approximately 12-14 slices).

Instructions

  1. Preheat the oven to 400 degrees F and spray a 9X13 baking pan with non stick cooking spray.
  2. Lay the chicken breasts out evenly in the baking pan and top with the onions.
  3. Then in a small bowl, stir together the tomato sauce, diced tomatoes, garlic salt, Italian seasoning, salt and pepper.
  4. Pour the mixture over the chicken in the baking pan. Then bake it for 25-30 minutes until the chicken reaches an internal temperature of 165 degrees F.
  5. Then top with the shredded mozzarella cheese and the sliced pepperonis.
  6. Bake for 5 more minutes in the oven to melt the cheese.
  7. Let the chicken set for 5-10 minutes and then serve warm. Enjoy!

Notes

  • *You can easily add your favorite pizza toppings to this pizza chicken recipe.  I love adding green peppers, black olives, ground sausage or hamburger as well. 
  • *Refrigerate the leftovers in an air tight container for up to 5 days.
