Ingredients
Calamari
- 250 gms calamari cleaned and cut
- 1 tbsp oil garlic infused
- 2 tbsp tomato tinned
- salt to taste
Risotto
- 200 gms arborio rice Carnaroli or Vialone nano, risotto rice
- 3 tbsp spring onions green part only
- ¾ tbsp extra virgin olive oil
- 50 ml white wine ¼ cup
- 625 ml vegetable stock low FODMAP, or hot water
- salt to taste
- 1 tbsp parsley chopped
- ½ tsp oil garlic infused
Notes
- Do not wash the rice before cooking it. You want to keep the starch in it, as that is what makes risotto naturally creamy.
