Ingredients
- 750 gms chicken thigh see the notes, 26 oz
- 1 ½ tbsp olive oil garlic infused
- 3 tsp ginger grated
- 15 curry leaves
- 10 ¼ tsp low fodmap curry spice mix
- 240 ml – 1 cup chicken stock low fodmap
- 150 gms lactose-free yogurt 1/2 cup plus 2 tbsp
- 2 tbsp cream lactose-free
- 2 potato cut into 5 cm - 2-inch cubes, medium
- Coriander fresh leaves
Notes
- I use a mix of skinless fillets cut into 2 or 3 pieces and skinless drumsticks.
- Use the full amount of my Low Fodmap Curry Spice Mix for the above recipe.
- If you are not following the low FODMAP diet, simply use regular oil (plus 1 clove of garlic), chicken stock, yogurt, and cream.
