Ingredients

  • 750 gms chicken thigh see the notes, 26 oz
  • 1 ½ tbsp olive oil garlic infused
  • 3 tsp ginger grated
  • 15 curry leaves
  • 10 ¼ tsp low fodmap curry spice mix
  • 240 ml – 1 cup chicken stock low fodmap
  • 150 gms lactose-free yogurt 1/2 cup plus 2 tbsp
  • 2 tbsp cream lactose-free
  • 2 potato cut into 5 cm - 2-inch cubes, medium
  • Coriander fresh leaves

Notes

  • I use a mix of skinless fillets cut into 2 or 3 pieces and skinless drumsticks.
  • Use the full amount of my Low Fodmap Curry Spice Mix for the above recipe.
  • If you are not following the low FODMAP diet, simply use regular oil (plus 1 clove of garlic), chicken stock, yogurt, and cream.
