Low Fodmap Dandan Chicken – a delicious chicken and vegetable stir-fry with a creamy peanut and sesame sauce and crunchy peanuts.

Ingredients

Stir-fry
  • 120 gms chicken breast sliced, 4 oz
  • ¼ tbsp olive oil garlic infused
  • ¼ tbsp sesame oil
  • 1 tbsp green onion green parts only, chopped
  • 30 gms carrot sliced, 1 oz
  • 55 gms red bell pepper sliced, 2 oz
  • 30 gms green beans roughly chopped, 1 oz
  • 10 gms peanuts roasted, 1/3 oz
Sauce
  • 10 gms ginger sliced or grated, 1/3 oz
  • 25 gms peanut butter 1 tbsp
  • 60 ml chicken stock low fodmap, 1/4 cup
  • ½ tbsp rice vinegar
  • ½ tbsp soy sauce
  • ¼ tsp maple syrup
  • 1/8 tsp Chinese five spice
  • 1/3 tsp sesame oil
