Ingredients
- 200 gms arborio rice 7 oz., or Carnaroli or Vialone nano risotto rice
- 3 tbsp spring onions green part only
- ½ tbsp extra virgin olive oil
- ½ tbsp olive oil garlic infused
- 80 gms red capsicum sliced, 3 oz
- 140 gms pork sausage 5 oz., low fodmap
- 50 ml white wine ¼ cup
- 625 ml vegetable stock low FODMAP, or hot water
- salt to taste
- 1 tbsp parsley chopped
- 4 tbsp parmigiano reggiano finely grated
Notes
- Do not wash the rice before cooking it. You want to keep the starch in it, as that is what makes risotto naturally creamy.
