Ingredients

  • 200 gms arborio rice 7 oz., or Carnaroli or Vialone nano risotto rice
  • 3 tbsp spring onions green part only
  • ½ tbsp extra virgin olive oil
  • ½ tbsp olive oil garlic infused
  • 80 gms red capsicum sliced, 3 oz
  • 140 gms pork sausage 5 oz., low fodmap
  • 50 ml white wine ¼ cup
  • 625 ml vegetable stock low FODMAP, or hot water
  • salt to taste
  • 1 tbsp parsley chopped
  • 4 tbsp parmigiano reggiano finely grated

Notes

  • Do not wash the rice before cooking it. You want to keep the starch in it, as that is what makes risotto naturally creamy.
