Ingredients

  • 1 1/2 cups whole-wheat pastry flour (180g)
  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter at room temperature
  • 1/4 cup + 2 tablespoons Raw organic cane sugar
  • 1/3 cup baking stevia
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line 2 cookie sheets with parchment paper.
  2. In a medium bowl, whisk the flour, starch, baking soda, and salt.
  3. In a separate large bowl use an electric hand mixer to beat the butter, 1/4 cup of the sugar, and the stevia together until well mixed. Add in the egg, egg yolk, and extracts, and beat until well combined.
  4. Stir the flour mixture in. Cover and refrigerate for 15 minutes.
  5. Once chilled, use a cookie scoop to form into 1-tablespoon sized balls. Roll each ball through the rest of sugar. Place onto the prepared pans and press out just under 1/2-inch thick.
  6. Bake until the top feels set, about 10-11 minutes. Then cool on the pan COMPLETELY (they set up a lot).
  7. DEVOUR!
