Low Sugar Pumpkin Bread Recipe

Tender pumpkin bread with banana and sugar free chocolate baking chips. Make two large loaves or 3 mini loaves to share. Perfect snack or breakfast idea.

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 ½ teaspoon ground cinnamon
  • 1 ½ teaspoon pumpkin pie spice
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • ⅔ cup canola oil or coconut oil
  • 3 eggs
  • 1 cup pumpkin puree
  • 1 cup mashed ripe banana about 2 large bananas
  • 1 cup chocolate chips optional

Instructions

  1. Preheat the oven to 350°F. Line with parchment paper and lightly grease two 9"x5" loaf pans or 3 5"x3" mini loaf pans with nonstick cooking spray and set aside.
  2. In a large mixing bowl whisk together the dry ingredients: flour, baking soda, cinnamon, pumpkin spice, salt, baking powder, granulated sugar, and brown sugar (if using).
  3. In a separate large mixing bowl, blend the oil, eggs, pumpkin puree, and banana until blended. Add the dry ingredients and stir just until combined.
  4. Mix in the chocolate chips if using.
  5. Divide the batter between the prepared baking pans.
  6. Bake for 45 to 60 minutes or until a toothpick inserted in the center returns clean. Cool in the pans for 5 to 10 minutes before removing to continue cooling on a wire rack.

Notes

  • When using very ripe bananas you can leave out the sweetener. You can also use sugar free alternatives like Swerve and golden monk fruit.
  • Use sugar free chocolate baking chips to lower the sugar in this recipe.
  • Nutrition calculation if for 2 loaves, 16 slices per loaf.
