Ingredients
- 2 pounds shredded carrots
- 1 cup Canned Pineapple Chunks
- 1 cup mayonnaise
- 1 cup raisins
- 1/2 cup powdered sugar
Instructions
- Soak the raisins in warm water for 5 minutes or until plump. Drain off the water.
- Drain off the juice from the canned pineapple chunks.
- Place carrots, pineapple chunks, mayonnaise, raisins, and powdered sugar in a large bowl
- Stir until well combined.
- Cover and refrigerate the carrot salad until ready to serve.

- Want to change this recipe up a bit? You can add some chopped nuts to this salad.
- It's ok to use crushed pineapple or even pineapple tidbits! If you have fresh pineapple on hand, that is even better!
