Luby’s Shredded Carrot Raisin Salad

Ingredients

  • 2 pounds shredded carrots
  • 1 cup Canned Pineapple Chunks
  • 1 cup mayonnaise
  • 1 cup raisins
  • 1/2 cup powdered sugar

Instructions

  1. Soak the raisins in warm water for 5 minutes or until plump. Drain off the water.
  2. Drain off the juice from the canned pineapple chunks.
  3. Place carrots, pineapple chunks, mayonnaise, raisins, and powdered sugar in a large bowl
  4. Stir until well combined.
  5. Cover and refrigerate the carrot salad until ready to serve.

Notes

  • Want to change this recipe up a bit? You can add some chopped nuts to this salad.
  • It's ok to use crushed pineapple or even pineapple tidbits! If you have fresh pineapple on hand, that is even better!
