Lucky Charm Pancakes

Whether it’s St. Patrick’s Day or just a fun morning surprise, these fluffy pancakes bring a little extra fun to breakfast.

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • ½ cup half and half you can also use heavy cream
  • ¾ cup milk whole milk or 2% milk will give the best flavor
  • ¼ cup vegetable oil you can also use canola oil, avocado oil, olive oil, or your favorite cooking oil
  • 2 teaspoons vanilla extract
  • 2 large eggs lightly beaten with a fork until the yolk is mixed in
  • 1 cup Lucky Charms cereal you want the scoop to have a good amount of marshmallows

Instructions

  1. Place flour, baking powder and salt into a large mixing bowl and mix well to combine.
  2. Add the cream, milk, vanilla, oil, and beaten eggs to the mixing bowl. Mix with a wire whisk until all the ingredients are fully combined and the batter is smooth.
  3. Place the Lucky Charms into the batter in the mixing bowl. Gently fold in the cereal until just combined.
  4. Spray a large skillet with cooking spray or add a little extra cooking oil to the skillet. Heat the skillet over medium heat.
  5. Drop 1/4 cup portions of the pancake batter onto the warm skillet. Cook the pancakes for about two minutes or until golden brown. Flip the pancakes and cook the second side for an additional 1-2 minutes, or until the centers of the pancakes are fully cooked through. See notes.
  6. Work in batches until all the pancakes are cooked, then serve and enjoy! Top with an extra sprinkle of cereal and a dollop of whipped cream and a drizzle of maple syrup if desired.

Notes

  • Butter can also be used to coat the pan when cooking the pancakes instead of oil and will give the pancakes a great flavor.
  • I've used a cast iron skillet in my images, but you can use any large skillet.
  • You can use another similar cereal to Lucky Charms or a store brand. I have also seen Lucky Charms marshmallow bits sold by themselves, which can be swapped out for cereal if you prefer.
  • Pancakes can be a little tricky because you need to watch them to get the right amount of heat. The first pancakes almost always brown a little more slowly than the following rounds of pancakes.
  • Pancakes can quickly become cold while you're working on the additional batches. Place pancakes on a platter or plate and cover them to keep them warm or place them on a pan in the oven set to warm.
  • Watch the pancakes brown carefully and adjust the heat down or up a little as needed. Adjusting the heat a little as you cook is really common, so the pancakes cook evenly.
