Lucky Charms Cookies

These fun Lucky Charms Cookies are perfect St Patrick's Day cookies loved by kids and adults. Soft and chewy mint cookies loaded with mint chocolate chips and Lucky Charms marshmallows!

Ingredients

  • 1/2 cup butter softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 3/4 Tbsp mint extract
  • 3-4 drops green food coloring
  • 1 1/2 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cream of tartar
  • 1/4 tsp salt
  • 1 cup mint chocolate chips
  • 1 1/2 cup Lucky Charms marshmallows

Instructions

  1. Preheat the oven to 350 degrees.
  2. Cream the butter and sugar.
  3. Add the egg, extract and food coloring and mix until the color is fully combined.
  4. Add the flour, baking soda, baking powder, cream of tartar and salt.
  5. Once fully combined, fold in the chocolate chips and lucky charms marshmallows.
  6. Roll into small balls and place them on a cookie sheet.
  7. Bake the cookies for 10 minutes. Let the cookies cool for 2 minutes before transferring to a cooling rack.
