Lunch Box Veggie Pizza Roll-Ups

Lunch Box Veggie Pizza Roll-Ups are the solution to making a healthy fun lunch box!

Ingredients

Sauce:
  • 1 tablespoon extra virgin olive oil
  • ½ cup carrots chopped
  • 2 talks celery chopped
  • 1 cup greens spinach, kale, or collards
  • 2 cups marinara sauce store-bought or homemade
Pizza Roll-Ups:
  • 1 pizza dough homemade or store-bought
  • 1 ½ cups mozzarella cheese shredded, plus more for topping

Instructions

  1. Preheat oven to 425 degrees F.
  2. In a saucepan, heat olive oil over low heat. Add carrots, celery, and greens. Saute for 5 minutes or until vegetables are tender.
  3. Add cooked vegetables and marinara sauce to a blender. Blend until smooth.
  4. Spread pizza dough into a rectangle on a lightly floured surface. Add veggie sauce onto the dough and spread out evenly. Sprinkle generously with cheese.
  5. Roll up dough, starting at the long end, until 1 large roll is formed. Pinch seam closed to seal. Slice dough log into 8 pieces.
  6. Lay pizza roll ups on a greased baking sheet. Sprinkle the top of each roll up with a little more mozzarella cheese. Bake for 15 minutes.
  7. Remove from oven and serve warm or at room temperature. I like to have some extra marinara on hand for dipping.
