Ingredients
Sauce:
- 1 tablespoon extra virgin olive oil
- ½ cup carrots chopped
- 2 stalks celery chopped
- 1 cup greens spinach, kale, or collards
- 2 cups marinara sauce store-bought or homemade
Pizza Roll-Ups:
- 1 pizza dough homemade or store-bought
- 1 ½ cups mozzarella cheese shredded, plus more for topping

Instructions
- Preheat oven to 425 degrees F.
- In a saucepan, heat olive oil over low heat. Add carrots, celery, and greens. Saute for 5 minutes or until vegetables are tender.
- Add cooked vegetables and marinara sauce to a blender. Blend until smooth.
- Spread pizza dough into a rectangle on a lightly floured surface. Add veggie sauce onto the dough and spread out evenly. Sprinkle generously with cheese.
- Roll up dough, starting at the long end, until 1 large roll is formed. Pinch seam closed to seal. Slice dough log into 8 pieces.
- Lay pizza roll ups on a greased baking sheet. Sprinkle the top of each roll up with a little more mozzarella cheese. Bake for 15 minutes.
- Remove from oven and serve warm or at room temperature. I like to have some extra marinara on hand for dipping.
