Ingredients

  • 1 cup prepared lupini beans 150 grams or 5.3 ounces
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon paprika powder
  • ¼ teaspoon dried basil
  • 3 tablespoon extra virgin olive oil
  • 1 tablespoon plus 1 teaspoon lemon juice

  1. Place all the ingredients in a small blender or food processor.
  2. Blend until you get a pale yellowish paste.
  3. Garnish with a dash of extra paprika powder (optional).
  4. Enjoy as a spread, dip, or sandwich filler.

  • The texture of this hummus will be a bit coarser than traditional hummus—almost like a mild tapenade.
  • Store in an airtight container in the fridge for up to 4 or 5 days.
  • Simply double or triple the amount to make a larger batch.
  • This is a great recipe to use homemade lupini beans. But you can also easily make them with store-bought packaged or jarred lupini beans, which you can easily find in local grocery stores or online.
