Lychee Juice Recipe
Lychee Juice Recipe blends canned lychees and their syrup into a pulpy juice with optional whole lychees and lemon garnish. The juice has a textured and floral sweetness with versatile serving options including as a refreshing drink or base for mocktails and cocktails. It can be strained for smoothness or served with pulp intact.
Ingredients
- 1 can lychees keep the brine too. If using fresh lychees, substitute with 10 fresh lychees, 1 Cup water and 1 T sugar.
- 1 lemon Optional Garnish and flavor.
Instructions
- Open the can of lychees and take out 1-3 lychees.
- Put the rest of the lychees, along with 1 Cup of the lychee brine, into the blender and blitz till well-processed.Tip: the rest of the lychee brine can be kept for lychee tea or lychee jelly.
- The litchi juice won't be totally smooth. Put in a glass, add the whole lychees you reserved earlier and enjoy! Optional: garish with edible rose buds or lemon slices.Note: I enjoy juice with bits but, if you don't, strain out the pulp into a glass, squeezing out as much juice as possible. The pulp can be added to your bakes for fibre!
- Drink immediately or store in the fridge for 2-3 days.
Notes
- Store lychee juice in the fridge and consume within 2–3 days for best freshness.
- For a spicy version, add peeled ginger per can of lychees before blending.
- Make a lychee mocktail by blending lychees without syrup, adding soda water, lemongrass syrup, and fresh mint.
- Strain juice for smoothness; reserved pulp can be used in baked goods to add fiber.
- Lychee juice can be mixed with tropical fruits or alcohol like sake, tequila, or vodka for varied drinks.
