Lychee Juice Recipe
Description
This Lychee Juice Recipe starts by blending canned lychees with some of their syrup to create a pulpy, sweet juice that maintains the fruit’s floral flavor. Reserving whole lychees allows them to be added back to the drink for a pleasant textural contrast and visual appeal. An optional lemon slice or edible rose buds can be used for garnish, enhancing aroma and flavor.
The lychee juice, not completely smooth, can be strained if a finer texture is preferred, with the leftover pulp useful as a fiber addition in baking. The juice is best consumed fresh or stored refrigerated for two to three days. It can be customized with additional ginger for spice, soda water for a lychee soda, or combined with syrups and spirits for mocktails and cocktails.
The juice’s sweet and floral nature makes it suitable for mixing with tropical fruits or enhancing cocktails with sake, tequila, or vodka. Its versatility also includes creative presentations such as a Halloween drink featuring rose syrup and lychee "eyeballs."

Ingredients
- 1 can lychees keep the brine too. If using fresh lychees, substitute with 10 fresh lychees, 1 Cup water and 1 T sugar.
- 1 lemon Optional Garnish and flavor.
Instructions
- Open the can of lychees and take out 1-3 lychees.
- Put the rest of the lychees, along with 1 Cup of the lychee brine, into the blender and blitz till well-processed.Tip: the rest of the lychee brine can be kept for lychee tea or lychee jelly.
- The litchi juice won't be totally smooth. Put in a glass, add the whole lychees you reserved earlier and enjoy! Optional: garish with edible rose buds or lemon slices.Note: I enjoy juice with bits but, if you don't, strain out the pulp into a glass, squeezing out as much juice as possible. The pulp can be added to your bakes for fibre!
- Drink immediately or store in the fridge for 2-3 days.

- For a spicy version, add peeled ginger per can of lychees before blending.
- Make a lychee mocktail by blending lychees without syrup, adding soda water, lemongrass syrup, and fresh mint.
