Macadamia Nut Banana Bread
Macadamia Nut Banana Bread blends ripe mashed bananas with sugar, eggs, and vanilla, enriched by vegetable oil for moistness. Ingredients
- 4 large banana mashed
- 1 cup sugar
- 2 large egg
- 2 teaspoons vanilla extract
- 1/2 cup vegetable oil
- 2 cups flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup macadamia nuts , chopped (divided)
Instructions
- Preheat oven to 350 degrees and spray loaf pan with baking spray.
- Add bananas, sugar, eggs, vanilla and oil to stand mixer on medium speed until smooth, about 1 minute.
- Sift together the flour, baking powder, baking soda, salt and cinnamon in a large bowl.
- Add it to the stand mixer on low speed until just combined, about 30 seconds.
- Mix in 3/4 cup macadamia nuts with a spatula, then pour into loaf pan.
- Top with remaining 1/4 cup macadamia nuts.
- Bake for 60-65 minutes.
