Ingredients

  • 24 ounces fresh mahi mahi cut into strips
  • 1 batch Mexican Coleslaw
  • 1 batch chipotle aioli
  • 1 tablespoon Homemade Blackened Seasoning
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • Keto friendly tortillas

Instructions

    Cup of Yum
  1. Heat a large skillet to medium and add in the butter and olive oil.
  2. Sprinkle the blackened seasoning on all sides of each piece of mahi mahi.
  3. Pan fry each piece for a few minutes on each side, until they are cooked through. Take some of the Mexican Coleslaw and add it to the bottom of a small Keto Tortilla.
  4. Add the strips of blackened Mahi Mahi over the coleslaw and add a little more on top. Then add a drizzle of the Chipotle Aioli over the top and serve. I added some thinly sliced avocado to mine, but that is completely optional.

Notes

  • If you can't find Mahi Mahi, you can use just about any fish that you like, including cod, red snapper, grouper and even salmon.
  • *Macros do not include the tacos, since the nutrition data varies greatly by brand or homemade.  Be sure to calculate those macros separately, depending on what you use.
