Description
The Make-Ahead Banana Coffee Cake features ripe bananas incorporated into a batter made from Bisquick mix, sugar, cinnamon, milk, vegetable oil, and eggs. Ingredients
For the Cake
- 1 ⅓ cups banana from about 2-3 ripe bananas), plus 1 large banana, sliced, mashed
- ⅔ cup granulated sugar
- ¼ cup milk
- 3 tablespoons vegetable oil
- 1 teaspoon ground cinnamon
- 3 egg
- 2 ⅔ cups Bisquick Mix from the store or homemade
- ¾ cup walnuts optional, chopped, or pecans

For the Streusel
- 1 cup Bisquick Mix from the store or homemade
- ½ cup walnuts optional, chopped, or pecans
- ½ cup brown sugar packed
- 6 tablespoons butter cut into small pieces
Instructions
- Heat oven to 350°F. Spray the bottom and sides of 13x9-inch pan with cooking spray.
- In large bowl, stir mashed bananas, granulated sugar, milk, oil, cinnamon and eggs. Stir in 2 2/3 cups Bisquick mix and 3/4 cup walnuts; fold in banana slices. Pour mixture into pan.
- In medium bowl, mix streusel ingredients, cutting in butter with pastry blender or fork until crumbly. Sprinkle over mixture in pan.
- Bake 30 to 36 minutes or until knife inserted in center comes out clean. Cut into 4 rows by 3 rows. Drizzle with maple syrup just before serving.
Make-Ahead Directions:
- Make as directed through step 3. Cover and refrigerate up to 12 hours. Uncover, and bake as directed in step 4.
Notes
- Batter and streusel can be prepared and refrigerated uncovered for up to 12 hours before baking.
- Use ripe bananas for optimal sweetness and moisture in the cake.
- Optional maple syrup adds extra sweetness when serving.
