Maman's Chicken Frittata -Kookooye Morgh

This is my maman's way of making chicken frittata. It requires a few ingredients and can be on the table in less than one hour! Persian delight!

Ingredients

  • 2 tbsp olive oil separated
  • 1/2 chicken breast cut into small pieces
  • 1 big potato cut into small pieces
  • 1 onion cut into small pieces
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp Turmeric
  • 3/4 cup water
  • 3 eggs
  • 2 tbsp breadcrumbs

Instructions

  1. Heat a tbsp olive oil in a pan over medium heat.
  2. Saute onion until translucent.
  3. Add chicken, potatoes and spices. Saute for 5 minutes until chicken is light.
  4. Add water and cover the pan. Let the chicken and potatoes cook for 20 minutes until fully cooked.
  5. Transfer everything into a bowl and mash using a potato masher. (Or just mix everything using a food processor)
  6. Add eggs and breadcrumbs. Mix until fully combined.
  7. Heat one tbsp olive oil in a medium size pan over medium-high heat.
  8. Pour the frittata batter into the pan, spread it using a spatula.
  9. Cover and let it cook for almost 10 minutes.
  10. Flip the frittata (You can cut it into wedges and then flip) and let it cook for another 5-10 minutes.
  11. Serve warm.
