Mama's Best Chicken Soup
Mama's Best Chicken Soup combines tender chicken tenderloins with diced onions, garlic, carrots, and potatoes simmered in a well-seasoned chicken stock. The herbs like Italian parsley, basil, and thyme add a fresh, aromatic touch. The broth strikes a balance between hearty and brothy, depending on the cook's preference for more liquid. Ingredients
- 1 teaspoon olive oil
- 1 onion diced
- 3 garlic diced, cloves
- 3 carrot peeled and sliced
- 2 potato peeled and chopped medium
- 6 cups chicken stock
- 1 to 2 teaspoons salt
- 1 teaspoon black pepper
- 1 1/2 lb. chicken tenderloins or rotisserie chicken, or chicken breasts
- 2 Tablespoons Italian parsley diced, fresh
- 2 teaspoons basil diced, fresh
- 1/2 teaspoon thyme
- *If you like it more on the "brothy" side add 2 more cups of chicken broth
Instructions
- In large stock pot, heat oil over medium high heat. Add onion and cook for 4-5 minutes, stirring often. Add garlic, carrots and potatoes. Add chicken stock, salt, and pepper and stir. Add chicken tenders and lower heat to low and cover. Let cook for 30-40 minutes or until carrots and onions are tender and chicken is cooked through.
- Shred chicken and add parsley, basil and thyme. Let cook for 5 more minutes. Taste and season accordingly.
Notes
- Using rotisserie chicken reduces total cooking time while keeping the flavor authentic.
- Adjust the amount of broth by adding extra chicken stock if you prefer a thinner, brothier soup.
- Season with salt and pepper toward the end to ensure balanced seasoning after all ingredients have cooked.
