Ingredients
- 1 teaspoon olive oil
- 1 onion diced
- 3 garlic diced, cloves
- 3 carrot peeled and sliced

- 6 cups chicken stock

- 1 teaspoon black pepper
- 1 1/2 lb. chicken tenderloins or rotisserie chicken, or chicken breasts
- 2 Tablespoons Italian parsley diced, fresh
- 2 teaspoons basil diced, fresh
- 1/2 teaspoon thyme
- *If you like it more on the "brothy" side add 2 more cups of chicken broth
Instructions
- In large stock pot, heat oil over medium high heat. Add onion and cook for 4-5 minutes, stirring often. Add garlic, carrots and potatoes. Add chicken stock, salt, and pepper and stir. Add chicken tenders and lower heat to low and cover. Let cook for 30-40 minutes or until carrots and onions are tender and chicken is cooked through.
- Shred chicken and add parsley, basil and thyme. Let cook for 5 more minutes. Taste and season accordingly.
