Mamounia (Mamounieh)

Mamounia (or mamounieh) is a delicious semolina pudding prepared with roasted semolina, butter and sugar syrup that is a breakfast favorite in Syria.

Ingredients

  • 1 cup medium wheat semolina
  • ½ cup samneh ghee or clarified butter
For the syrup
  • 4 cups water
  • 1¼ cup caster sugar
For the decor
  • 1 tablespoon samneh ghee or clarified butter
  • ¾ cup pine nuts and/or pistachios
  • cinnamon

Instructions

  1. Melt the tablespoon of clarified butter in a skillet and brown the pine nuts and/or pistachios. Set aside.
  2. In a saucepan, add the water and sugar. As soon as the mixture starts to boil, turn off the heat. Set aside.
  3. In a frying pan, melt ½ cup (100 g) of clarified butter. As soon as the butter starts to melt, add all the semolina at once. Mix well and stir constantly with a spatula for about 10 minutes on medium/low heat. The semolina must take a caramel color.
  4. Put the pan of water and sugar on medium heat and when it starts to boil, pour it over the roasted semolina. Mix well and lower the heat.
  5. Simmer on low heat for 2 minutes maximum. The resulting mixture should have the texture of a thick cream.
  6. Pour immediately into a deep plate or a bowl.
  7. Sprinkle with cinnamon and garnish with toasted pistachios and/or pine nuts.
