Ingredients
Ingredients for Mandarin Apple Salad:
- 1 large head of romaine lettuce
- 1-2 medium apples add to a small bowl with juice of 1/2 lemon + 1/2 cup water to keep from browning
- 3-4 mandarins seedless
- 1/2 small red onion finely chopped
- 1/2 cup walnuts optional
- 1/4 cup craisins dried cranberries
- 1/4 cup crumbled Feta cheese optional
- Sweet Balsamic Vinaigrette
Ingredients for the Sweet Balsamic Vinaigrette:
- 1/2 cup sugar
- 3/4 cup extra-virgin olive oil
- 1 tsp salt
- 1/4 cup balsamic vinegar
Instructions
- Wash, chop and spin dry your romaine lettuce. Than transfer your greens to the salad bowl.
- Peel and separate mandarins. Toss into the salad bowl.
- Chop apples into 1/2" pieces. If you aren't eating your salad right away, add apples to a small bowl filled with juice of 1/2 lemon + 1/2 cup water to keep from browning. Just drain and toss in when ready to serve!
- Top salad with chopped onion, walnuts and craisins. Add dressing to taste and then sprinkle with feta if you wish. Voila!
