Mandarin Orange Chicken Salad
Mandarin Orange Chicken Salad features a mix of chopped cooked chicken, romaine, and cabbage with drained canned mandarin oranges. Tossed with a zesty dressing of soy sauce, rice vinegar, ginger, sesame and olive oils, chile-garlic sauce, honey, garlic, salt, and pepper, the salad balances savory, sweet, and tangy flavors. A crunchy topping of chow mein noodles or toasted almonds adds texture.
Ingredients
Dressing:
- 2 tablespoons soy sauce low-sodium
- 3 tablespoons rice vinegar
- 1 teaspoon ginger fresh, minced
- 2 tablespoons olive oil
- 1 teaspoon sesame oil
- 1-2 teaspoons chile-garlic sauce
- 1 clove garlic finely minced or pressed through a garlic press
- 1 tablespoon honey
- black pepper to taste
- salt to taste
Salad:
- 3-4 cups cabbage can use coleslaw mix, shredded
- 3-4 cups romaine lettuce chopped
- 2 cans cans (11-ounces each) mandarin orange drained
- 3 cups chicken cooked, chopped
- 3 green onions chopped
- 1-2 cups Chow Mein noodles chopped almonds (or both, or toasted
Instructions
- For the dressing, whisk together all the ingredients and season to taste with salt and pepper. Set aside or refrigerate until ready to use (it can be made several days in advance and refrigerated).
- In a large bowl, toss together all the salad ingredients except for the chow mein noodles.
- When ready to serve, pour the dressing over the salad and toss to combine (add the dressing gradually if you like less dressing - you may not need to add it all). Sprinkle the chow mein noodles or almonds on top and serve immediately.
Notes
- Rotisserie chicken works well for quick assembly, or cook chicken stovetop as preferred.
- Freezing ginger in segments makes grating easier when needed.
- Adjust the amount of chile-garlic sauce in the dressing to vary the spice level.
