Mandarin Orange Chicken Salad
Description
This salad blends shredded cabbage and chopped romaine lettuce with cooked chicken and mandarin orange segments. The dressing combines low-sodium soy sauce, rice vinegar, fresh minced ginger, olive oil, sesame oil, chile-garlic sauce, garlic, honey, salt, and pepper to offer a layered, tangy, and mildly spicy flavor profile with a touch of sweetness. This dressing can be prepared several days ahead and refrigerated, allowing flavors to meld.
The salad base provides fresh crunch and mild sweetness from the cabbage, lettuce, and mandarin oranges, complementing the savory chicken. Chow mein noodles or toasted almonds sprinkled on top add a crispy contrast to the softer ingredients. The salad is tossed with dressing just before serving to maintain the noodles’ crunch.
Rotisserie chicken is a convenient option for the protein, or simple stovetop-cooked chicken can be used. Fresh ginger can be grated from frozen segments for convenience. Adjust chile-garlic sauce to control heat intensity according to preference.

- When ready to serve, pour the dressing over the salad and toss to combine (add the dressing gradually if you like less dressing - you may not need to add it all). Sprinkle the chow mein noodles or almonds on top and serve immediately.
