Maneštra is a traditional Istrian soup popular throughout Croatia, which is similar to Italian minestrone.

Ingredients
- 12 oz. dry Romano beans , previously soaked for 10 hours
- 8 oz. smoked pork chops
- 1 bone prosciutto
- 2 carrots , peeled and diced
- 6 oz. parsnips , peeled and diced
- 1 large potato , diced
- 1 stalk celery , diced
- 5 oz. corn
- 2 bay leaves
- 10 oz. macaroni pasta
- ½ cup virgin olive oil
- 1 large onion , finely chopped
- 5 cloves garlic , crushed
- 2 tomatoes , peeled, seeded and finely chopped
- 1 teaspoon paprika
- 6 basil leaves , chopped
- 2 tablespoons finely chopped flat-leaf parsley
- 3 tablespoons white vinegar
- salt
- black pepper , freshly ground
Instructions
- Place soaked and drained beans, prosciutto bone, smoked pork ribs, carrots, parsnips, potato, bay leaves, celery, corn in a large pot
- Cover with water about 4 inches (10 cm) above the ingredients and bring to a boil over high heat.
- Cook over high heat for 2 minutes then reduce to low heat.
- Cover and simmer for 2 hours over low heat, stirring occasionally.
- Ten minutes before the end of cooking, cook the macaroni pasta separately in a saucepan according to the instructions on their packaging.
- At the end of cooking, remove the smoked pork chops and the prosciutto bone from the soup.
- Separate the meat from the bones, cut the meat into pieces and return the pieces to the pot.
- Heat the olive oil in a frying pan and sauté the onion over medium heat for 2 minutes, stirring frequently.
- Add the garlic, stir and sauté until golden brown.
- Add paprika and tomato and sauté for 1 minute.
- Add the basil and brown, stirring for a few seconds, then add this mixture to the soup as well as the cooked pasta shells.
- Taste and adjust salt and pepper.
- Add the parsley, stir and serve the maneštra with croutons or toast.
